Sauce

120ml (4.06 oz) water
1 tbsp oyster sauce
1 tbsp premium dark soy sauce
1 tbsp light soy sauce
1 tsp sugar
A few dashes white pepper
1 tbsp cornflour (cornstarch)

Scallion & Spring Onion Oil

Some cooking oil
5 shallots, sliced thinly
4 stalks spring onion, use the stem part here and the rest when you are almost done cooking the dish

Other ingredients

600g (21.16oz) prawns, deveined and pat dry
1 tbsp Chinese cooking wine or Shaoxing Huatiao wine
