SOLE SAMBALIngredients:1 (800g-1kg) pc sole fish, skin removed and fins cut tsp salt tsp pepper3 tbsp oil cup butterSambal:3 pc dried chilies, soaked in warm water for 1 hour tbsp tamarind paste3 cloves garlic1 pc small red onions, chopped1 tsp shrimp paste2 tbsp oil1 tbsp palm sugarcoriander sliceslemon slicesProcedure:1. Make the sambal by blending all the ingredients. Cook in a pan over low heat for 8-10 minutes or until liquid has greatly reduced and the paste has changed color. Set aside.2. Season your fish with salt and pepper on both sides. In a pan with hot oil, cook the fish for 3 minutes on both sides.
