MUNGGO TOFU SISIG (DOES IT WORK?)

Tofu sisig is cool but how about trying munggo sisig? Thats on a different level! Munggo is almost always cooked the classic guisado way, but lets not forget that it can also be transformed into completely unexpected dishes like burger patties or even an interesting dessert!

MUNGGO TOFU
2 cups mung beans soaked overnight
1 onions
2 tbsp garlic
1 red bell pepper, sliced
1 green bell pepper, sliced
3 green chilies, sliced
1 tbsp liquid seasoning
cup japanese mayo
cup calamansi Juice
1 tbsp soy sauce
2 tbsp oyster sauce

Instructions:
1. Blend your soaked mung beans along with twice the amount of water per cup of mung beans until smooth. Drain solids away and add into a pot.
2. Cook mixture over medium heat until it forms a thick viscous paste for about 10 mins. Place mixture in baking dish and let set in the refrigerator for 1 hr to firm up.
3. Once firm, slice into cubes and sear in hot pan until both sides are brown. To make this into sizzling tofu saute onions, garlic and chili until translucent.
4. Add in bell peppers and your mung bean tofu and cook for 2 mins. Add in your liquid seasoning, mayo, calamansi juice, soy sauce, oyster sauce and pepper. Toss to combine and serve on a sizzling plate.
