Pa Jun is a Korean scallion pancake. Youll be surprised at how simple it is to make. Add leftovers or just keep it simple with a bunch of green onion. Pa means scallion and Jun means pancake. Make this on the next rainy day and serve it with a cold beer for the grownups and juice for the kids.Pancakes2 cups all-purpose flour1 1/2 cups water2 eggs1 carrot, gratedHandful of kale, roughly chopped5 or 6 scallion, cut on the biasSalt and pepper to taste (optional)Feel free to add any ingredients like shrimp or chicken!Mix all the ingredients in a bowl and let sit for about 10 minutes in the refrigerator.Dipping sauce1 clove of garlic, mincedFingertip size of ginger, minced1 scallion, chopped1/2 cup soy sauce1 teaspoon toasted sesame oil1/4 cup seasoned rice vinegar1/4 cup mirinMix all ingredients together in a bowl. Cover the bottom of a nonstick pan with about an inch of vegetable oil on medium high heat.
