INGREDIENTS

Marinating ingredients
1 lb (16 oz) beef flank steak (or skirt steak, or other cut), sliced into 1/4” (4 mm) thick pieces
1 tablespoon Shaoxing wine (or dry sherry)
1/4 teaspoon salt
1 teaspoon cornstarch

Sauce
1/4 cup chicken broth
2 tablespoons soy sauce
1 teaspoon dark soy sauce (Optional)
2 tablespoons Shaoxing wine (or dry sherry)
4 teaspoons sugar
2 teaspoons cornstarch
1/4 teaspoon white pepper powder

Stir-fry
2 tablespoons peanut oil (or vegetable oil)
3 dried Chinese chili peppers
4 cloves garlic, sliced
2 Chinese scallions (or leeks), tough end removed and sliced on a bias
