Kindergartners take over with this Easy Couscous Salad Recipe

Couscous salad.
What I like most about couscous is that you can add any seasonal ingredients you like to it.

In this recipe we added:
1 1/2 cups couscous
1 large zucchini or 2 small zucchinis, diced
1/2 cup of dried cranberries
1/4 cup crumbled feta cheese
the juice of 1/2 of lemon
1/4 cup extra virgin olive oil
small bunch of parsley. keep the leaves whole in this one. Just pull from the stem
S&P to taste

Cook couscous according to package.
