Spinach dal/Keerai kootu is a delicious South Indian gravy.It goes very well with rice or roti.It is made with spinach, toordal , coconut and spices.Ingredients:Spinach- 1.5 lbsSprouted moongdal- 1 cupToordal- 1/2 cupTurmeric powder- 1/2 tspSalt- As neededHing- A pinchShredded coconut- 1 cupJeera- 1 tspRed chillies- 4Oil- 1 tspMustard seeds- 1/2 tspDirections:1.Pressure cook 1/2 cup toordal for upto 4 whistles. Mash it well and keep it aside.2.Take spinach, turmeric powder, salt, hing and sprouted moongdal(optional) in a vessel.Let it boil.3. Grind 1 cup coconut, jeera and red chillies with water into a fine paste.4.When the moongdal and the spinach leaves are cooked, add the ground paste.5..Let it boil for 3-5 minutes.
