Keerai kootu/Spinach dal | Gayathiri's Cookbook

Spinach dal/Keerai kootu is a delicious South Indian gravy.It goes very well with rice or roti.It is made with spinach, toordal , coconut and spices.

Ingredients:
Spinach- 1.5 lbs
Sprouted moongdal- 1 cup
Toordal- 1/2 cup
Turmeric powder- 1/2 tsp
Salt- As needed
Hing- A pinch
Shredded coconut- 1 cup
Jeera- 1 tsp
Red chillies- 4
Oil- 1 tsp
Mustard seeds- 1/2 tsp

Directions:
1.Pressure cook 1/2 cup toordal for upto 4 whistles. Mash it well and keep it aside.
2.Take spinach, turmeric powder, salt, hing and sprouted moongdal(optional) in a vessel.Let it boil.
3. Grind 1 cup coconut, jeera and red chillies with water into a fine paste.
4.When the moongdal and the spinach leaves are cooked, add the ground paste.
5..Let it boil for 3-5 minutes. Then add the mashed toordal and cook for another 2 minutes.Switch off the heat.

Spinach dal is ready!!
