How to make Omelette Muffins/Quick-on the Go Recipe your Kids will Love

Here's a fun and easy way to make omelette's on the go. Use a muffin tray. It's equally portioned and perfect for the little one's to hold in their hands especially if you're running late for school. ;-)

Make a lot and freeze them. stick them in the microwave for about 30 seconds or so and voila!

Ingredients are endless, use what you have but here's what we used in ours.

6 eggs (one egg for each muffin tin slot)
about a 1/4 of an onion, chopped
1 small zucchini, chopped
1/4 cup shredded cheese (use your favorite)
2 slices of ham, chopped
small amount of parsley, (Kyler kept the stems whole)
3 cherry tomatoes, sliced in half and equally placed on top
s&p to taste

Pre-heat your oven to 375 degrees F.

Using a mixing bowl, add the onion, zucchini, ham, cheese and parsley and mix it up.

using a separate mixing bowl, mix together the eggs.

Spray the muffin tins with cooking spray.

Equally add the ham & cheese mixture into the muffin tins.
Equally ladle in the egg mixture over the ham & cheese.
Top with the sliced tomato.

Bake the omelet muffins in the oven for about 20 minutes

Once they are done, let them cool.
