How to make LASAGNA CUPCAKES using Wanton Skins

Lasagna cupcakes are perfect for parties and SUPERBOWL gatherings. Like most of our recipes, this one is super simple and no need to get fancy with the sauce. Use your favorite or the next time you make a big pot of homemade sauce, put some aside and make lasagna cupcakes with the kids or your friends.

The portions of this dish may vary which is fine. you may like more cheese or less salt. Watch the video for inspiration then tweak the ingredients and add others. It's hard to go wrong with this one. Just experiment and have fun. Also, because the size of these lasagna cupcakes, I chose not to add an egg to my ricotta cheese mixture. I felt like it would have made it too wet. But you be the judge.

Wonton skins can be found at most supermarkets. It's actually made with the same ingredients as pasta and it's easy to use.
What we used:
36 wonton skins
meat sauce (hard to say how much, but an average size jar should be plenty)
6-8 oz. ricotta cheese (depending on how much you like to add)
dash of nutmeg
grated parmesan cheese. (1/8 cup)
1/2 cup mozzarella cheese
small amount of basil for garnish

Pre-heat your oven to 400 F.

stir a dash of nutmeg in with the ricotta cheese.
I used a non stick muffin try with 12 slots. Begin by pressing one square wonton skin into the bottom of each muffin tin. Take a small amount of sauce and ladle it on the wonton.
add about a table spoon of ricotta mix and a hefty pinch of shredded mozzarella cheese. Using a circular cookie cutter or cup, cut the wonton to make it round. This will be the middle so place it over what you have so far. Got that part? ok, good. Now repeat. Sauce, ricotta and mozzarella. You could stop here but I kept going and added one more "round" wonton. I finished with a smaller amount of sauce... say about a teaspoon. finish with grated parmesan, pinch of mozzarella and a small basil leave or pinch of julienned basil.

Bake in the oven for about 15-20 minutes at 400F.

Take out, let cool, set on cooling tray. I like to drizzle good quality extra virgin olive oil over once it's finished and plated. you can even add more fresh basil.

The kids will love them and so will you and your friends. AND, it's portioned controlled. SWEET!
