Homemade MINESTRONE SOUP Recipe/made with a Kid

Minestrone soup is the perfect winter soup on a cold day or night. Hearty vegetables, some pasta and finished with a dollop of pesto. Yum!

1 medium onion
3 stalks celery
3 carrots
4 cloves garlic
2 Tablespoons olive oil
1 tsp salt
1/2 tsp pepper
2 small zucchini
28 oz. diced tomatoes
8 cups vegetable broth
1 cup small pasta shells or tubes
2 Tbsp prepared pesto

Cut onion into quarters, peel, and thinly slice. Add to bowl.
Thinly sliced celery. Add to onions. Cut carrots into thin, half-moon shaped pieces. Add to onion. Smash and peel garlic cloves. Mince and add to onions. Heat olive oil in large soup pot over medium heat. Add veggies, slat and pepper. Stir well. Cook 10 minutes to soften.
Turn heat to high and bring soup to a boil.

Meanwhile, cut zucchini into thin, half-moon shaped pieces. Once vegetables are soft, add zucchini, tomatoes, and broth to the pot.
Once soup boils, reduce heat to medium and add pasta. Simmer soup for 10 minutes or until pasta is tender.
Swirl pesto into soup.
