Grilled Cheese, Tomato Onion Relish with a Fried Egg by Erwan Heussaff

Chop up 2 small red onion and half a tomato, put them in a small pot with a tbsp of olive oil, some salt, some pepper, a tbsp of balsamic vinegar and a tsp of sugar (optional). On medium just let it get sweet and caramelised.

Take two pieces of bread. Here i like to use Gardenia Wheat Cranberry Loaf because its high in fiber and has great bits of Cranberries in it (which are natural antioxydants by the way) giving a brust of flavour that complements the cheese really well. Fill this with a slice of mild cheddar cheese and a handful of mixed grated parmesan and mozarella. Fry off on medium in a pan with 1 tsp of butter and 2 tsps of olive oil. Cover with a plate (watch the vide) and flip when nice and brown on one side. To make a cheese crust place some more grated cheese straight on the pan and then cover it with the sandwich again and let stick.

Serve with the Relish and a Fried Egg.
