Gomoku-mame Recipe (Simmered Soybeans with Vegetables and Shrimp) | Cooking with Dog

We are making Gomoku-mame, a healthy bean side dish you always want to keep on standby. Despite the light flavor, the savory taste of the shrimp, shiitake and kombu makes this dish absolutely delicious. I might not be able to stop eating it.

(4 people) Cook Time: 45 minutes

220g Steamed Soybeans or substitute: boiled soybeans, unsalted (7.8 oz)
40g Burdock Root (1.4 oz)
60g Konnyaku or Konjac (2.1 oz)
1 Dried Shiitake Mushroom
40g Carrot (1.4 oz)
Hayani Kombu Seaweed (14x4cm/5.5x1.6”) (quick-cooking; for simmered dishes)
10g Dried Shrimp, optional (0.4 oz)
4 Boiled String Bean Pods, cut into 1cm pieces
350ml Dashi Stock (1.48 cups)
1 1/2 tbsp Sugar
1 tbsp Usukuchi Soy Sauce or substitute: regular soy sauce
* usukuchi is both saltier and lighter in color than regular soy sauce.

* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml
