Her mother-in-law used to sell shark meat fritters. Since Mdm Chua took over in the year 2000, she kept the fritters ongoing - a nostalgic touch that's less common nowadays - as a topping for her Lor Mee.Adding to the bowl are the savoury braised pork, egg, crispy fried wanton, and crunchy flour batters. These are served in a bowl of thick yellow noodles and/or bee hoon, drenched in thick braised gravy, and then topped with minced garlic, chopped chilli and chilli paste. Add some vinegar to get a sour tang! The Lor Mee looks deceptive easy to prepare, but in fact a lot of work goes into preparing the ingredients.
