Serves 3-4 persons as main course
Fill your house with the tantalising scents of the Aegean Sea by frying this fresh small fish! A very easy recipe that contains a few tricks to achieve maximum crispiness when smelt are fried so watch out for all my tips! Serve them with this simply amazing yoghurt sauce and don’t miss to have a look at my delicious serving suggestions too, yum!

INGREDIENTS:
For frying the Smelt:
500gr/1lb 2 oz Fresh Smelt (Atherina in Greek)
For the flour mix coating:
125gr/4.4oz/1 cup All-purpose Flour
2 tbsp. Fine Semolina (for extra crispiness
