Foxtail millet is rich in dietary fibre, protein and low in fat. Unlike rice, foxtail millet releases glucose steadily without affecting the metabolism of the body.This upma recipe is very simple and can be served with chutneys or curd.Ingredients:Foxtail millet/Thinai airs- 1.5 cupsToordal- 1/2 cupBlack pepper seeds- 1 tbspJeera- 1 tspOil- 2 tbspMustard seeds- 1/2 tspCurry leaves- For seasoningShredded coconut- 1/2 cupRed chillies- 2Salt- 3/4 tspHing- A pinchRecipe:1. Grind 1/2 cup toordal,1.5 cups Thinai arisi/Foxtail millet,1 tbsp black pepper seeds and 1 tsp jeera into a coarse powder.Keep it aside.2.Heat oil in a pan. Add 1/2 tsp mustard seeds. When the mustard seeds crackles, add 2 red chillies and curry leaves. Saute for a minute.3. Add 5 cups of water. When the water boils, add a pinch of hing,1/2 cup shredded coconut, salt and the ground mixture.4. Close the lid and cook for 5 minutes. 5. Cook until the water evaporates.6. Then transfer it to another container .Place the container in a pressure cooker or idly cooker and steam it for 15 minutes.7.
