So simple, so good. Gambas al ajillo (garlic chilli shrimp) are one of Spains star tapas. Its a dish thats fun to make, and that you can literally cook it in minutes. Venga, lets go.

THE RECIPE!


INGREDIENTS
*Per person
250 grams unpeeled shrimp
2 cloves of garlic
1 dried chilli (or more if you like it hot)
Tablespoon of finely chopped parsley
2 tablespoons of fino sherry (or white wine) - optional
Extra virgin Olive oil
Salt

Crusty bread for serving

PREP
Peel the shrimp. Slice the garlic into fine slices. Chop the parsley very finely.

COOKING
Pour about a decent glug of olive oil in the pan over a medium heat, so its just a little more than covering the surface. The olive oil-y juice at the bottom of the bowl is what youre going to mop up with the bread - so be generous here.

Once the oil is warm, add the garlic and the chilli. Stir for about 30 seconds.

Once the garlic is starting to golden, add the shrimp.

Mix the garlic in all the chilli and garlic. Spring generously with salt. Cook it for about 1-2 minutes (or less). As its turning opaque, add the parsley. Stir a little more.

Pour the shrimp and oil into your serving dish.

Pour the sherry into the hot pan, and let the alcohol burn off and the sherry reduce down.

Pour the resulting sauce over the shrimp.

Grab your crusty bread and get eating!
