Drumstick Sambar/Murungaikai Sambar | Gayathiri's Cookbook

Drumstick sambar is a popular south Indian gravy usually served with rice or tiffin varieties.This recipe is a traditional brahmin style recipe as I have not used onion or garlic to prepare it.Serve it with hot plain rice and dry vegetables.

Ingredients:
Tamarind water- 2.5 cups
Turmeric powder- 1/2 tsp
Salt- 1 tsp
Hing- A pinch
Drumstick-2
Tomatoes- 2
Sambar powder- 2.5 tsp
Toodal- 1/2 cup
Oil- 2 tsp
Mustard seeds-1/2 tsp
Curry leaves- For garnishing

Directions:
1. Pressure cook 1/2 cup toordal or moongdal for upto 4 whistles. Mash it well and keep it aside.

2. Take 2.5 cups Tamarind water. Add 1/2 tsp turmeric powder, Salt, A pinch of hing, 2.5 tsp Sambar powder, 2 tomatoes and drumstick to the tamarind water.

3. Boil until the raw smell of the sambar powder and the tamarind goes away. Check whether the vegetable is cooked.

4. Add mashed dal and adjust the sambar consistency by adding water.

5. Let it boil for another 2-3 minutes.

6.Season with mustard seeds.

Drumstick sambar is ready!!!
