Mushroom Sauce (1:09)
- Olive oil
- Brown, shitake and portobello mushrooms
- ½ stick butter
- Salt and pepper
- 3 garlic cloves
- ¾ cup red wine
- ¼ cup broth + 4 tbsp cornstarch
- 1 ½ cup broth
- 2 tablespoons chopped tarragon
- Some dried Shitake mushrooms or mushroom powder

Entrecote (6:22)
- 250 g butter
- 1 medium shallot and a half a white onion
- 2 tablespoons of chopped tarragon
- 1 bunch of Italian parsley
- 1 basil leaf bunch
- 3 anchovies
- Salt and pepper to taste
- 1 lemon
- 1 tbsp extra virgin olive oil
- 2 tsps of capers with brine
- 2 tsps Dijon mustard
- 1 egg yolk

Italian Salsa Verde (9:19)
- 1 cup of mint, chives and parsley
- 1/3 cup of extra virgin olive oil
- 1 pc of garlic
- 1 tbsp of capers
- 2 anchovies
- 1 lemon a
- salt and pepper to taste

Pepper Sauce (10:53)
- ¼ cup sweet port
- ½ cup beef broth
- 1/3 cup double cream
- 4 tsp crushed whole black pepper
- Salt to taste
