Yacon Pork Ribs Soup -

Ingredients
350g pork ribs ()
1 medium (250g) Yacon (), cut into chunks
1 pearl corn, cut into chunks
1 small carrot (), cut into chunks
5 red dates
2 slices ginger
1 tbsp goji berries
1.2 liters water

Method
1. Blanched pork ribs with sliced ginger, rinse and set aside
2. In a heavy duty soup pot, bring water to boil and add in all ingredients except goji berries
3. When mixture comes to boil, low the heat and simmer for an hour
4. Add in goji berries, season with salt to taste if preferred
5. Remove from heat and serve
