Vegetable soupI the Buddhist Chef

This Vegetable Soup is amazing, its healthy, its comforting and 1,000 times better than what youll get in a can! Full of flavor and so easy to make, you cant go wrong with a big warm bowl of vegetable soup.

Vegetable soup

3 tbsp olive oil
1 chopped onion
3 carrots, peeled and chopped
3 celery stalks chopped
1/2 cabbage, diced
3 diced yukon gold potatoes
1-796 ml can diced tomatoes
1-540 ml can of tomato juice
1-540 ml can of red kidney beans, drained
3 bay leaves
1 tbsp dried basil
1 tbsp dried oregano
1/4 tsp crushed red pepper
6 cups vegetable broth 1,5 liter
1 to 2 tsp salt
Black pepper to taste

Heat olive oil in a large pot over medium-high heat.
Add onions in and saut for 5 minutes then add carrots, celery, cabbage and saute 5 minutes longer.
Add the rest of the ingredients, bring to a boil, reduce the heat to medium-low, cover and simmer for 30 minutes.
Remove the bay leaves and serve.
