There's a saying in Spain - the only part of the pig you don't use is the "oink". In other words - you use it all! I'd always wanted to experience a traditional Spanish pig slaughter, so I travelled north to a village near Segovia where a family still do it the old-fashioned way. It was a moving, fascinating and delicious experience. From one pig, they will eat for much of a year, including making their own ham (jamn) I think people who are interested in eating meat in a sustainable way, and homesteading, will really enjoy watching my experience.
