The FIRST Italian Cookbook | Pellegrino Artusi's "La Scienza in Cucina e l'Arte di Mangiar Bene"

Pellegrino Artusi's 1891 cookbook, while not the first to be written in Italy, is widely considered to be the original repository of Italian food knowledge. It was the first cookbook to address the cuisine of the entire boot, not just a specific region.
