Next time you make a homemade Mac 'N cheese, try looking for a quinoa pasta and make it with a delicious homemade cheese sauce!8 oz. pasta (we're using quinoa pasta shells) 8 oz. shredded cheese (i'm using a bag that includes cheddar and jack) 1 1/2 tablespoons flour 1 1/2 tablespoons butter (clarified butter is traditional way of making) 1 cup of whole milk about 1-2 tablespoons of fresh herbs (parsley & thyme) Optional s&p to tasteCook pasta according to directions on the box in a small sauce pot, heat butter until it melts and add flour whisking until it looks like a paste. Let cook for a few minutes on medium low heat. Slowly add your milk and continue to whisk. I let this cook for about 5 minutes. Then add add your cheese, herbs and seasoning.When the pasta is done, strain and put into a bowl or back into the pot and mix in the cheese sauce or Mornay sauce.You can stop here and enjoy or you can add pasta and cheese sauce to a buttered oven proof dish and bake for about 5-10 minutes in a 350 F oven.
