The Best 7 minute SOY SAUCE EGG/ Easy

Shoyu Tamago or Soy Sauce egg

In this video, Kyler and I boil an egg for 7 minutes. The result? firm on the outside, jammy and creamy yolk in the center. To take it to the next level, we prepared a soy sauce marinade. Traditionally, Sake and mirin would be added to the sauce sauce mixture, but we use water and sherry vinegar with an extra bonus of crushed garlic.
The suggested marinade time is 2-6 hours. I'm sure it's fine if you go more, but if you're really anxious and want that egg, and can wait up to 6 hours, it's worth it.

*note: you can of course use any vinegar, but the flavors will be slightly different. All good, though. experiment.

It's beautiful on its own or you can combine the 7 minute soft boiled soy sauce egg on toast, avocado toast, split and placed on top of Ramen... you get the point. Here's how we prepared this version of Shoyu Tamago.

3 egg
3/4 cup soy sauce
1/4 cup water
2 tablespoons sherry vinegar
1 tablespoon sugar
1 clove of garlic (optional)

start by boiling a pot of water

heat water, then dissolve sugar. add vinegar, soy sauce and crushed garlic. Set aside.

When water comes to a boil, gently place in the eggs. Set your timer for 7 minutes. Don't wonder off, it's pretty crucial to get this perfect. If you go over even 20 seconds it's not the same. While eggs are boiling, prepare an ice bath for the finished eggs. Cold water and ice.
Ok, now that the eggs are done, strain and place eggs into ice water. this stops the cooking process. An easy tip is to gingerly crack the egg shell in the ice water and with finesse, peel off the shell then place smooth, shiny egg in a separate bowl. Once eggs are placed, pour soy sauce marinade over eggs, place a paper towel on top and cover. The paper towel will help keep eggs submerged as well as covering the tops of eggs with mix. This marinade should be enough for almost 8 eggs. If you do less, just save the marinade for other eggs or other cooking for that matter.

Refrigerate for 2-6 hours. Once ready to use, slice in half, pinch of sea salt or maldon salt. Furikake is another wonderful addition to sprinkle on top. link to FURIKAKE http://amzn.to/2tyJnme
