Smashed Potatoes served in an iron skillet on the grill. This recipe is perfect for camping trips or simply made outside when it's too hot to cook indoors. We cook our potatoes in an iron skillet but you can also try wrapping your potatoes in aluminum foil and then placed on the grill.two big handfuls of baby or fingerling potatoesmany glugs of olive oil2-3 cloves of garliccouple stems of each: Rosemary/thyme1/2 lemonsalt and pepperStart your grill. Put iron skillet on top grate to get very hot.Begin by par boiling your potatoes. Try using different colors to change it up. Strain and dryGet your grill HOT! Using the bottom part of your palm, press down to crush each potato. Place in a large mixing bowl. Once you have done this, add a few glugs of olive oil to coat. Pull down on the stem of each the rosemary and thyme and add to potatoes. Crush the garlic. You can chop it up if you want. We just added the crushed clove in this recipe. Salt and pepper to taste.Add potato mixture to iron skillet and and brown to your liking. Add finished potatoes to a serving place and add more herbs, squeeze of lemon and some finishing salt.
