Serves 3-4 persons
This is my very own creation for a light, healthy Summery Salad. The most important ingredient is the Anthotyro cheese, made in small balls and coated with sesame seeds.
Refreshing, infused with a slightly sweet Vinaigrette sauce, it gives you all the wonderful taste combinations that you would expect from a Summer Salad.
To be enjoyed at the beach, under a parasol, with good company and cold beer!! What do you think?
Suitable for lacto-vegetarians.

INGREDIENTS:
Ingredients for the Salad:
120 gr / 4.2 oz Mixed, fresh Greens i.e. Butterhead Lettuce, Iceberg Lettuce, Red Leaf Lettuce, Rocket leaves (arugula) etc. or choose your own mix (washed, cut and bought ready from supermarket).
150 gr / 5.5 oz Greek Anthotyro cheese, soft and semi sweet (altern: Ricotta)
About 1/3 cup / 50 gr / 1.75 oz Sesame Seeds, roasted
50 gr / 1.75 oz Sun-dried Tomatoes, cut in strips
10-15 Green Olives, pitted
Optional: about 50 gr / 1.75 oz Pomegranate, Tangerine, Orange slices
Ingredients for the Vinaigrette Sauce:
40-45 ml / 2.5-3 tbsp. Extra Virgin Olive Oil (EVOO)
15 ml / 1 tbsp. Balsamico Vinegar
30 ml / 2 tbsp. Greek Thyme Honey
30 ml / 2 tbsp. Water
Ground Salt and Pepper
