Stuffed brinjal curry/Ennaikathirikai curry | Gayathiri's Cookbook

This is tamilnadu style stuffed brinjal dry curry. People usually mix this with rice or it is taken as a sidedish for sambar and rasam. tastes great with morkulambhu and sambar. I love to eat this with Morkulambhu.

Ingredients:
Brinjals- 12
Oil- 4 tbsp
Mustard seeds-1/2 tsp
Coriander seeds- 1/2 cup
Channadal- 1/4 cup
Red chillies- 10-15
Turmeric powder- 1/2 tsp
Salt- As needed
Curry leaves- For garnishing

Recipe:

1.Prepare the spice powder: Roast 1/2 cup coriander seeds, 1/4 cup channadal and 10 red chillies in little oil until the dals turn golden brown. Add 3/4 salt and grind the ingredients into a fine powder.

2. Slit the brinjals into 6 or 8.Do not cut fully. Stuff the ground powder into this and keep it aside.

3. Heat 4 tbsp oil in a pan. Add 1/2 tsp mustard seeds. When the seeds start to crackle, add curry leaves and the stuffed brinjals.

4. Add 1/2 tsp turmeric powder,1/4 tsp salt and the remaining ground powder on top.

5. Close the lid and cook on medium flame until the vegetable is soft.

6. Open the lid and turn the brinjal around every 2 minutes. Cook until the brinjals are soft.

7. After the brinjals are cooked, keep it open.Add oil now and then , and roast it.

8.Roast until the powders turn dark brown or black. Keep it on medium flame until the end.
