Steamed Ginger Chicken

Made a Steamed Chicken [swipe ] dish tonight with drizzle of garlic, ginger and onion sauce.

Ingredients
1/2 portion of chicken, halve
1/4 tsp sea salt
1 tsp grated ginger juice
3 piece pandan leaves
handful of black fungus, optional .
Ginger Onion Sauce
2 stalk scallion, chopped
1 tsp grated ginger juice
1/4 tsp light soy sauce
1/4 tsp sesame oil
2 garlic cloves, minced
3 slices ginger, shredded
1 tbsp oil

Method
1. Trim, rinse and pat dry chicken then rub it with ginger juice and salt. Set aside for 15 minutes
2. Trim and lay pandan leaves on steaming plate then place marinated chicken on it and steamed over medium heat for 20 minutes or until chicken is cooked through
3. Turn off the heat and stand for 5-10 minutes while preparing the ginger sauce
4. Saut shredded ginger and minced garlic with 1 tbsp of oil on Low heat till browned
5. In a bowl add chopped spring onion, ginger juice, chopped bird eyes chill (optional), light soy sauce and sesame oil then pour in hot garlic oil and mix well
6. Cut chicken into bite size, spoon 1 tbsp of the steamed chicken juice and mix with the garlic oil then pour over to the chicken and serve immediately
