Southindian Spicy Sandwich | Gayathiri's Cookbook

A simple but a healthy sandwich for breakfast or evening snack under 15 minutes.This is a perfect lunch box option, especially for kids.

Ingredients:
Bread slices - 10
Oil- 2 tsp
Mustard seeds- 1/2 tsp
Uraddal- 1 tsp
Channadal- 1 tsp
Green chillies- 3
Curry leaves- 1 stem
Carrots- 1.5 cup
Potatoes - 1 cup
Onion- 1 cup
Tomatoes- 2
Turmeric powder- 1/2 tsp
Salt- As needed
Red chilli powder- 1 tsp

Directions:
1.Heat 2 tsp oil in a pan. Add mustard seeds. When it starts to crackle, add channadal and uraddal.
2.When the dals turn golden brown, add onion and green chillies. saute until translucent.
3.Add tomatoes and cook until soft.
4.Then add grated potatoes and grated carrots, turmeric powder and salt and cook until the vegetable are soft.
5.Add red chilli powder and cook until the raw smell goes away.
6. Heat panini maker. Add 2 tbsp of vegetable mix on one slice of the bread. Cover it with another slice. Grill for 2-3 minutes or until the bread turns golden brown.

Spicy sandwich is ready!!
