Tonight we are having Saba Kimchi Stew which is perfect for the cooling weather after the evening rain. This dish is very easy to prepare with key ingredients such as.Ingredients 1 whole saba, fillet and cut into 4 1 large potato, cut into chunksome carrot cubes, optional1 small brown onion, sliced 1 clove garlic, lightly pound 1/2 - 3/4 tbsp korean hot pepper paste100g chopped kimchi400 - 500ml water.Method1. In a soup pot or Korean stone pot add kimchi, onion, potato, carrot, garlic, hot pepper paste and water then bring to boil. 2. Lower heat and simmer for 20 minutes till potato is soft 3. Meanwhile marinate saba with 1/2 tbsp cooking wine and 1/4 tsp salt for 5 minutes4. Dust with potato starch and pan-fried over Low heat for 3 minutes on each side till brown. Remove and add into kimchi stew then continue to simmer for another 5 minutes 5. Lastly remove from heat, sprinkle some toasted sesame seeds and chopped spring onion. Serve immediately
