Papaya Kootu:Raw Papaya is a rich source of essential daily nutrients including vitamins, proteins, and enzymes. It aids in digestion, improves absorption of iron, prevents heart diseases, soothes inflammation or infections, and prevents aging.This is a South Indian recipe which can be consumed with hot steamed rice or roti. I have used semi-raw papaya for this recipe which gives little sweetness to the Kootu . You can use either 100% raw papaya or Semi-Raw papaya. Ingredients:Raw papaya(small)-1Toordal-1/2 cupChannadal-1/4 cupBlack pepper-1/2 teaspoonCumin seeds- 1 teaspoonShredded coconut-1/2 cupRed.chillies-6Turmeric powder-1/2 teaspoonSalt-3/4 teaspoonOil- 3 teaspoonMustard seeds-1/2 teaspoonCurry leaves- for garnishingDirections:1. Pressure cook 1/2 cup toordal for 4 whistles. Mash it and set aside.2. Sauté 1/2 teaspoon black pepper and 5 red chillies for 2 minutes with little oil.3. Grind this sauté with 5 red chillies, 1/2 tsp black pepper, 1 tsp jeera and 1/2 cup shredded coconut into a fine paste. Set aside.4. Cut papaya into small pieces. Take papaya with 1 cup of water in a sauce pan. Keep it on medium flame.5. Add turmeric powder, salt and channadal. Cook until papaya pieces are soft.6. Add the ground paste and mashed toordal. Mix it well.7. Let it boil for 3-5 minutes over medium flame. 8. Heat 2 tsp oil. Add 1/2 tsp mustard seeds, curry leaves and 1 red chilly. Let the mustard seeds splutter.9. Add this tadka to papaya Kootu.Papaya Kootu is ready!!.
