1 lb (450 g) ground pork
2 tablespoons papery shrimp (Optional)
2 tablespoons light soy sauce (or soy sauce)
2 tablespoons Shaoxing wine (or dry sherry)
1 teaspoon dark soy sauce
1 tablespoon grated ginger
1/2 teaspoon salt
1/2 teaspoon sugar
1/8 teaspoon ground white pepper
1 tablespoon toasted sesame oil
14 stalks (130 g) garlic chives, sliced into 1/4 (0.5 cm) pieces
