Odamaki-mushi Recipe (Chawanmushi with Udon Noodles | Egg Custard with Plenty of Fillings) | Cooking with Dog

We are making Odamakimushi, a savory egg custard cup called chawanmushi with udon noodles. People from all generations will enjoy this dish.

How to make Odamaki-mushi

(3 people) Cook Time: 30 minutes

2 Eggs
300~350ml Dashi Stock (1.27~1.48 cups)
1/2 tsp Salt
1/2 tsp Soy Sauce

1 package of Boiled Udon Noodles
3 Small Shiitake Mushrooms
20g Cut Wakame Seaweed, rehydrated (0.7 oz)
1 tsp Soy Sauce
1 tsp Sake or substitute: dashi stock

6 Small Sausages
1~2 pieces of Spaghetti
3 Boiled Quail Eggs, packaged
3 slices of Kamaboko Fish Cake with pig face

Mitsuba Parsley

* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml
