Morkulambhu or Buttermilk gravy is a south Indian style gravy which is prepared with sour buttermilk, coconut,green chillies and jeera. This is a traditional brahmin style recipe. It is very easy to prepare and tastes great with hot steamed rice and potato fry, stuffed brinjal(ennaikathirikai) curry, Arbi( seppankilanghu) fry etc..Ingredients:Buttermilk/Moor- 2 cupsTurmeric powder- 1/2 tspSalt-3/4 tspHing- A pinchcurry leaves- 5-10Oil- 2 tspMustard seeds- 1/2 tspRed chillies- 2Okra- 10Coconut- 1/2 cupJeera- 1 tspGreen chillies- 5Morkulambhu Recipe:1. Heat 2 tsp oil in a pan. Add mustard seeds. When it starts to crackle, add 2 red chillies and cut okra. Saute with 1/4 tsp turmeric powder and 1/4 tsp salt.When the vegetables are cooked, switch off the heat.2. Grind 1/2 cup Shredded Coconut,1 tsp Jeera and 5 Green chillies into a fine paste adding little water.3. Beat 2 cups of buttermilk. Add 3/4 tsp salt, a pinch of hing, ground coconut paste, and sauteed okra and curry leaves to the buttermilk. Mix it well.4. Keep it on the stove on medium flame.
