Open Inarizushi Bento
Ingredients
300 g rice
sushinoko (instant sushi mix)
2 abura-age
100 ml water
2 + 1/2 Tbsp sugar
1 + 1/2 Tbsp soy sauce
1 radish
cucumber
salmon roe
takuan (pickled daikon)
capers
salmon flakes
lemon
sauteed eggplant
lettuce

Directions
1. In a pot, heat water, sugar, and soy sauce, add the abura-age and simmer.
2. Combine the rice and sushinoko to make sushi rice.
3. Cut the abura-age in half lengthwise, fill with the rice to make 3 inarizushi pieces, then place in the bento box on a bed of lettuce.
4. Top one of 3 with radish and cucumber slices, then add salmon roe.
5. Top the 2nd of 3 with thin strips of takuan and capers.
6. Top the 3rd of 3 with salmon flakes, lemon slices, and sauteed eggplant.
