We made a Singaporean Seafood Paella

Were challenging our creativity this Christmas with a Hokkien Mee-style Seafood Paella recipe.

Adding Singaporean flavours to this iconic Spanish dish was a combination we werent expecting BUT IT WORKS! Its the perfect balance of umami, seafood and tanginess in one dish.

Though paella is traditionally cooked with a paella pan, we opted for a wide pan which works as well!

We made a homemade sofrito (paella sauce) with sweet, bright tomato puree and classic Singaporean Hokkien Mee flavours of pork lard. We mixed in Spanish rice and added in saffron-infused prawn stock that we made from scratch too. Topped with plenty of seafood, roasted pork and crispy pork lard and garnished with kalamansi, heres a great meal to enjoy with the best company. Salud!

Ingredients:
600g Prawns
2 tbsp Lard
200g Roast pork (diced)
1 Red onion (fine dice)
1 Red bell pepper (fine dice)
5 cloves Garlic (minced)
Salt and pepper
200g Canned tomatoes
1 tsp Chilli powder
100ml Dry sherry
500g Spanish rice
Prawns
200g Squid
100g Clams
Crispy pork lard
Kalamansi
Coriander

Prawn stock:
3 tbsp Lard
3 cloves Garlic (sliced)
1 Red onion (sliced)
Prawn shells
30g Ikan bilis
1 tsp White peppercorns
1.5 litre Boiling water
