This Salad is a bit different than the common ones.
It combines boiled lentils, beloved Halloumi cheese, a rich garlicky vinaigrette sauce and as special garnishing the unique Kritamo (wild, rock samphire/seafennel).
You can prepare it using leftovers from your Lentil Soup.
It makes a super lunch, it's quite nutritious and has an awesome taste combo!

INGREDIENTS
Ingredients for the salad:
250 gr. / 9 oz Boiled Lentils i.e. Lentil Soup, Cold (100 gr. / 3.5 oz net)
100 gr. / 3.5 oz / 4 slices Halloumi Cheese
3 tbsp. Brined, wild Rock Samphire aka Kritamos
3 fresh Spring Onions, cut in rounds
1/2 Green or Red Pepper (capsicum), cubed
6-7 big Olives, cut in rounds plus 1 whole Olive to garnish

Ingredients for the Vinaigrette:
60 ml/ 4 tbsp. extra virgin Olive Oil (EVOO)
30 ml / 2 tbsp. Balsamic Vinegar
1 Garlic Clove, minced
Ground Salt and Pepper
