Korean Spicy Pork in 5 minutes

Todays dinner is another easy #onepanmeal which can be ready in 5 minutes. Korean Spicy Pork serve with banchan and purple rice
.
Ingredients
200g iberico pork belly
1 pack enoki mushroom
1 medium brown onion, sliced
handful of shredded carrot
some chopped spring onion
toasted sesame seeds
.
Spicy Sauce
2 tbsp Korean chilli paste
1/2 tbsp Korean chilli flakes
2 tbsp light soy sauce
1 tbsp sugar
2 tbsp mirin or rice wine
2 tbsp water, kelp or chicken stock
3 clove garlic, minced
1/4 tsp grated ginger
dash of pepper
.
Method
1. Preheat a cast iron pan or hot plate, saut onion and mushroom for 20 seconds
2. Add pork belly and give it a quick stir to mix through
3. Next stir in spicy sauce and simmer for 10 seconds
4. Turn off heat and sprinkle some chopped spring onion and sesame seeds. Serve immediately with rice and banchan
.
Note
1. Normal frying can be used for this recipe
2. Iberico pork can be replaced with chicken or beef
3. Enoki mushroom can be replaced with soy bean sprout
