How to Make Macha Kuzumochi (Green Tea Mochi Dessert with Kudzu Powder Recipe) | Cooking with Dog

We are making two kinds of Kuzumochi, a refreshing mochi dessert made from kudzu root starch also known as kuzuko. The slight bitterness of the matcha and the refreshing texture of kuzu are great!

How to make Matcha Kuzumochi

* Time for cooling the kuzumochi is not included in cook time.

- Macha Kuzumochi -
25g Hon-Kudzu - Real Kudzu Powder (0.88 oz)
15g Granulated Sugar (0.53 oz)
1/2 tsp Matcha - Powdered Green Tea
125ml Water (0.53 u.s. cup)
Anko - Red Bean Paste
Dairy Cream

- Regular Kuzumochi -
25g Hon-Kudzu - Real Kudzu Powder (0.88 oz)
10g Raw Sugar (0.35 oz)
125ml Water (0.53 u.s. cup)
Kinako - Toasted Soybean Flour
Kuromitsu - Brown Sugar Syrup

** You can use Potato Starch (Katakuriko) instead of the kudzu starch powder, but the texture will be different from the one with the real kudzu powder. If you use Potato Starch (Katakuriko), try the following recipe.

200ml Water (0.845 u.s. cup)
4 tbsp Katakuriko - Potato Starch
2 tbsp Sugar

* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml
