We decided to try making vegan style PUMPKIN TRUFFLES. however, it's not 100% vegan because we chose to use semi sweet chocolate and not a vegan chocolate. These PUMPKIN TRUFFLES require no baking and don't take much time to prepare. 1 cup pumpkin puree1 cup powdered sugar1 cup coconut flour1 tablespoon coconut oil1 1/2 tablespoons pumpkin pie seasoningteaspoon of cinnamon1 teaspoon vanilla extract1 1/2 cups chocolate chipsMix all ingredients (except chocolate) together in a bowl, then roll PUMPKIN mix into little balls.Melt the chocolate in a bowl over simmering water or in the microwave.Dip the balls in the chocolate and place on a platter with parchment or wax paper.Freeze for about 15-20 minutes.Done!
