Use your leftover rice and turn it into a healthy and delicious meal. Here is how we made our "Shrimp fried rice".Ingredients:glug of grape seed oil. (vegetable oil is also good)8 oz. of peeled and deveined shrimp2 eggs1 tomato (or use 1 red pepper) 1 carrot, peeled and finely chopped1 celery stalk, finely chopped3 scallions, finely sliced2 cloves of garlic, crushed1 thumb size piece of ginger, finely chopped1 cup jasmine or basmati rice (after it is cooked, it will be more like 3 cups)1/4 cup frozen peas1 tablespoon soy sauce1 tablespoon sesame oilgenerous squeeze of lemon juice + some of the zestchopped herbs such as cilantro, basil or parsley to top it off.Heat a quick glug of oil in wok and add the shrimp cooking for about 3 minutes, turning once. Remove and set aside.crack and whisk the eggs. add to the wok on medium heat and stir often. break it apart with a wooden spoon, remove and set aside.Heat up a quick glug of the oil and sautee the carrots and celery for about 2 minutes. Add the garlic, ginger and scallions and continue sauting for another 2 minutes.Add the rice and break up any lumps. stir it all up then add the peas, soy sauce and sesame oil. Drop in the cooked shrimp and eggs. once plated, give a good squeeze of lemon juice and if you have a zester or microplane on hand, let it rain a bit of citrusy zest over the rice. Then top with a soupon of freshly chopped herbs and s&p to taste.
