How to make an Easy version of Pasta Carbonara/ Made with a Kid

Pasta or spaghetti carbonara originated in Rome, Italy. Its basic ingredients are egg yolk, cheese like pecorino, pancetta or bacon (which we use) and black pepper. We also added onion, garlic and peas to our. This pasta dish is super fast to make and a crowd pleaser as well. Your kids will love it!

8oz. spaghetti (or pick a pasta you like)
two egg yolks.
1/2 cup or as much as you like pecorino and/or parmesan cheese (we used both cheeses)
4 slices of thick bacon, cut into cubes or 1/2" pieces
good pinch of black pepper
1/2 onion diced (optional)
1 clove garlic, crushed (optional)
1/4 cup fresh or frozen peas (optional)

Bring water to a boil and add some salt
cook pasta according to package.

sweat the onion and garlic till translucent. set aside. Cook the bacon to render out some of the fat. Slightly soft is good.

separate egg yolks and whisk. Add grated cheese and black pepper to the eggs.

When the pasta is al dante, add it to the saut pan with bacon. stir in onion/garlic and slowly stream in the egg mixture, stirring as you go. You can add the peas now as well. Take a small amount of the pasta water and pour it over, continuously mixing. The starchy water should will help make it a little silkier. Plate and serve immediately.
