How to a make a Croque Madame Sandwich/Easy Recipe

When you make a grilled Ham and Cheese sandwich with bechamel inside it's called a "Croque Monsieur". It's delicious! Now... add a sunny side up or fried egg on top of the sandwich bread and you have yourself a "Croque Madame". It's even more delicious. If you've never made it before, now's the time to try making "Croque Madame".
Here's how we made ours.

makes two sandwiches
4 slices of brioche bread (you can use sourdough or country white, too)
4 slices of ham
4 slices of cheddar cheese (in this recipe we're using an organic hickory smoked cheddar. YUM!)
2 tablespoon of all purpose flour
1 tablespoon of butter
1 cup of whole milk
1/4 teaspoon of apple cider vinegar
2 eggs
salt and pepper to taste

start by making the bechamel sauce

in a sauce pot on medium, mix 1 tablespoon of butter and the flour for a few minutes. This is called a Roux. Next slowly add the milk and whisk. Do this until the mix becomes thick. I sometimes add a little vinegar now and season it but in this video, we removed it from the heat and added about a 1/4 teaspoon of apple cider vinegar. season to taste with salt and pepper. Give it another mix and set aside.

Now for the sandwich. In a pan on medium high heat add 1/2 tablespoon of butter. Add a heaping tablespoon of bechamel to each side of two slices of bread. Add two slices of cheese and two slices of ham on top of one piece of bread with bechamel and then close it up with other piece of bread, bechamel side down. I like to brush a little of the melted butter on each outer side of bread before adding it to the pan. Once you add it to pan, start with the side that the cheese is on and gently press it down and weigh it down with something heavy if you can. Flip it when the bread looks like a deep brown color. You may need to cover the sandwich with a lid to get the cheese to melt more. It's worth it!
Remove from the pan and fry an egg in the same buttery pan and then gently place it on TOP of the sandwich.
Repeat for the second sandwich. You can cut it into squares or rectangles, whatever shape you grew up enjoying most, that's all up to you, we don't judge. ;-)
