We asked some of our friends what we should make this Thanksgiving, and we received some great ideas. Kyler and I both agreed on "Corn Pudding" and we add a few extra non traditional ingredients at the end. Here's how we make it: (this recipe serves 4)2 Tbsp sugar1 1/2 Tbsp AP flour1 tsp baking powderpinch of salt3 eggs1 cup whipping cream1/4 cup melted butter4 ears of corn, kernels 1 can of corn kernels, drained (you can use frozen corn as well)sprinkle of paprikasprinkle of nutmeg cotija cheese, optionalcilantro, optionalred pepper flakes, optionalpreheat oven to 350 F.In a bowl, combine the dry ingredientsin a separate bowl, whisk the eggs, cream and butter, then add the cornGingerly mix the dry ingredients with the wet ingredients. Grease a bowl and pour corn mixture into bowl. Bake 45-60 minutesWe topped our serving with crumbled cotija cheese, and some roughly chopped cilantro.
