How to make creamy Corn Pudding / Thanksgiving

We asked some of our friends what we should make this Thanksgiving, and we received some great ideas. Kyler and I both agreed on "Corn Pudding" and we add a few extra non traditional ingredients at the end.

Here's how we make it: (this recipe serves 4)

2 Tbsp sugar
1 1/2 Tbsp AP flour
1 tsp baking powder
pinch of salt
3 eggs
1 cup whipping cream
1/4 cup melted butter
4 ears of corn, kernels
1 can of corn kernels, drained (you can use frozen corn as well)
sprinkle of paprika
sprinkle of nutmeg

cotija cheese, optional
cilantro, optional
red pepper flakes, optional

preheat oven to 350 F.
In a bowl, combine the dry ingredients

in a separate bowl, whisk the eggs, cream and butter, then add the corn

Gingerly mix the dry ingredients with the wet ingredients.

Grease a bowl and pour corn mixture into bowl.

Bake 45-60 minutes

We topped our serving with crumbled cotija cheese, and some roughly chopped cilantro. I added a pinch of red pepper flakes and a drizzle of good quality
