How to make CHOCOLATE BREAD PUDDING/ Easy Recipe

Chocolate bread pudding is one of those recipes that when you taste it, you might just hear angels sing.

Stale bread, some custard, chocolate chunks about 45 minutes in a 350 degree oven and you have yourself a delicious dessert!

Chocolate chunk bread pudding!

6 cups stale country bread
6 tablespoons unsalted butter, softened
pinch of salt
orange zest
pinch of cinnamon
2 cups milk
2 cups heavy cream
8 egg yolks + the whites from 1 egg
2 cups sugar
4 oz. 70% chocolate
1 teaspoon vanilla extract
rosemary stalk

Set oven to 350 degrees F.
mix the butter, salt, orange zest and cinnamon together in a bowl. Cut bread into 1" slices and butter both sides. Rustically cut into cubes. Using your hand, smear the remainder of the butter mixture around a casserole dish. Add the bread to the buttered dish.
Making the custard:
separate the 8 egg yolks and add to a mixing bowl + the egg whites from 1 egg. (save the egg whites from remaining 7 eggs for a yummy egg white omelette!).
Add 2 cups of sugar with the egg yolks until smooth. In a sauce pot, combine the 2 cups of milk and 2 cups of heavy cream (or 4 cups of 1/2 & 1/2) to the pot and simmer. Add vanilla. This part only takes a few minutes. Just combine it and get it nice and warm.

Gingerly add a ladle of milk/cream mixture to the bowl of eggs, and whisk. Be careful, you don't want to cook the eggs, so do this slowly. Once you have tempered the eggs, go ahead and slowly pour the rest of the cream mixture in with the eggs. Take your rosemary stalk and stir the mixture then go ahead and drop it in the bowl. This will add lovely savory and herbaceous notes to the custard mixture.

Coarsely, chop the chocolate into big chunks and evenly distribute over the bread. pour the custard mixture over the bread and chocolate and let soak for about 25 minutes. I like to add a little more orange zest over the top and another shake of cinnamon couldn't hurt either. But not too much!

Place your dish of bread pudding mixture into a larger casserole dish or tray and pour enough water to go about 1/2 way up. This will prevent any burning and drying out of the bread. Bake for about 45 minutes.
Now it's ready! Fresh whipped cream or vanilla ice cream go great with this dish. Side effects: tears of joy and satisfaction, you may hear angels sing, 2nds and 3rd servings are common, the urge to hide last portions on your loved ones.
