Makes 250 gr / 9 oz Olives
Today, I am delighted to show you my new project! How to cure, preserve and beautifully marinate your own olives at home! I was lucky to be able to go to a friend's olive grove, cut a few brunches with green olives and cured them myself.
I usually buy them uncured from an open market in much larger quantities, of course.
But this time, I wanted to show you the whole process, using a very small quantity to make it easier for you to see it clearly.
The process is very simple, just time consuming. So let me show you how to make these gorgeous homemade olives!
Suitable for vegans and fasting.

INGREDIENTS:
Ingredients for cleansing the Olives:
250 gr / 9 oz Greek, Green Olives, uncured, freshly harvested and RIPE!
1 sterilized Jar of volume: 750 ml / 3 cups
Ingredients for the brine/curing:
4 x 500 ml / 2 cups Water
4 x 2 tbsp. / 35 gr / 1.2 oz Salt
Ingredients for the marinade:
250 ml / 1 cup lukewarm Water
2 tsp. / 12 gr / 0.4 oz Salt
1 Lemon cut in half rounds
Lemon Juice from 1 Lemon
1 tsp. dry Thyme
2 Bay Leaves
1 large Garlic Clove cut in fourths
About 100 ml / 0.4 cup Extra Virgin Olive Oil
