Homemade Dumpling Soup

Made a pot of chicken stock to go with our homemade dumplings plus some huge choy sum from Cameron Highland
.
Chicken Stock
10 chicken drumstick bones
1 medium carrot, cut into chunk
1 medium onion, cut into quarter
4 garlic cloves
3 slices ginger
2 stalks scallion
.
Method
1. Blanch chicken bone, rinse and set side
2. In a stock pot saut onion, garlic and ginger till fragrant, add blanch chicken bones and carrot and cook for 30 seconds before adding 1.2L hot water
3. When mixture comes to boil, add scallion then lower the heat and simmer for 30-45 mins
4. Drain stock before using

Dumpling Fillings
100g ground meat
1/2 tsp grated ginger
1/2 tbsp cooking wine
1/2 tsp sesame oil
1/2 tbsp light soy sauce
1/4 tsp chicken stock powder
dash of pepper
1/2 tbsp chopped scallion
