Fried Breaded Chicken Cutlets: Plain and Alla Parmigiana - Lunch with Gianni | Gianni North Beach

This week I'm making one of my favorites: fried chicken. Specifically, fried breaded chicken cutlets.

I love them plain, with a squeeze of lemon or fancied up as chicken cutlets alla parmigiana (aka chicken parmesan or chicken parm). Your choice how you want to eat them---all are delicious.

I forgot to show you on camera what I do with the leftover egg wash, but it's super simple: fry it up in a hot pan for a tasty snack. You can even toast some of the leftover breadcrumbs first and add it to the egg for a little more texture.
