Edamame Salad/Make-ahead/Lunch/Make-ahead dinner | Gayathiri's Cookbook

This is a high protein, high fiber, and a low fat salad.This super delicious make- ahead salad is made with edamame, chickpeas,red beans, black beens, corn, Green vegetables ,onions and tomatoes.Its so easy to throw together in a bowl and mix up for a snack or as a mannish for lunch or dinner.

Ingredients:
Edamame - 2 cups
Chickpeas- 15 oz
Black beans- 15 oz
Yellow corn- 15 oz
Red kidney beans- 15 oz
Yellow or red onion- 1 cup
Crushed tomatoes- 1 cup
yellow paper- 1 cup
Red pepper- 1 cup
Green pepper- 1 cup
Carrots- 1 cup
Olive oil- 2 tbsp
Kimalayan salt- 1 tsp
Crushed black pepper- 2 tsp
Red wine/Rice vinegar-1/2 cup
Hummus- 2 tbsp
Shredded lettuce- 1 cup
Dried cranberries, blueberries and raisins- 1/4 cup
Thousand island or Catalina sauce- For dressing

Recipe:
1. Chop Onion, Tomato and all the vegetables(Carrots,Yellow bell pepper,red bell pepper, Green bell pepper) finely.

2.Rinse and drain all the canned vegetables.(rinsing the canned vegetables will remove the packed salt).

3. Prepare the dip: Combine 2 tbsp olive oil, 2 tsp black pepper powder, 1 tsp Himalayan salt, and 1/2 cup Redwine vinegar or rice vinegar together.

4. Add all the ingredients: Finely cut onion-1 cup, Tomatoes-1 cup, Carrots-1 cup, Green, Yellow and red bellpepper- 2 cups, Yellow corn- 15 oz can, Black beans- 15 oz can, Red kidney beans- 15 oz can, Chick peas-15 oz can and edamame - 2 cups. Mix it well.

5. Cover and refrigerate overnight(or atleast 2 hours)

6. Before serving, add lettuce, spinach(optional, Dried berries(blackberry,cranberry), raisins, Hummus(red pepper hummus).

Serve chilled.

Edamame salad is ready!!
