This is a high protein, high fiber, and a low fat salad.This super delicious make- ahead salad is made with edamame, chickpeas,red beans, black beens, corn, Green vegetables ,onions and tomatoes.Its so easy to throw together in a bowl and mix up for a snack or as a mannish for lunch or dinner.Ingredients:Edamame - 2 cupsChickpeas- 15 ozBlack beans- 15 ozYellow corn- 15 ozRed kidney beans- 15 ozYellow or red onion- 1 cupCrushed tomatoes- 1 cupyellow paper- 1 cupRed pepper- 1 cupGreen pepper- 1 cupCarrots- 1 cupOlive oil- 2 tbspKimalayan salt- 1 tspCrushed black pepper- 2 tspRed wine/Rice vinegar-1/2 cupHummus- 2 tbspShredded lettuce- 1 cupDried cranberries, blueberries and raisins- 1/4 cupThousand island or Catalina sauce- For dressingRecipe: 1. Chop Onion, Tomato and all the vegetables(Carrots,Yellow bell pepper,red bell pepper, Green bell pepper) finely.2.Rinse and drain all the canned vegetables.(rinsing the canned vegetables will remove the packed salt).3. Prepare the dip: Combine 2 tbsp olive oil, 2 tsp black pepper powder, 1 tsp Himalayan salt, and 1/2 cup Redwine vinegar or rice vinegar together.4. Add all the ingredients: Finely cut onion-1 cup, Tomatoes-1 cup, Carrots-1 cup, Green, Yellow and red bellpepper- 2 cups, Yellow corn- 15 oz can, Black beans- 15 oz can, Red kidney beans- 15 oz can, Chick peas-15 oz can and edamame - 2 cups. Mix it well. 5. Cover and refrigerate overnight(or atleast 2 hours)6. Before serving, add lettuce, spinach(optional, Dried berries(blackberry,cranberry), raisins, Hummus(red pepper hummus).Serve chilled.
