Cod Fish Fingers -

[with recipe] Made some fish fingers using cod fish fillet to go with steamed rice and braised egg. On side I also prepare some refreshing fruit drink using mint leave, lemon, cherry and honey.

This cod fish finger is pretty easy to prepare and you can replace it with salmon or barramundi too.

Ingredients
300g cod fish fillet
potato starch
beaten egg
breadcrumbs

Method:
1. Trim cod fillet (1cm x 10cm) and lightly marinate it with cooking when, dash of pepper & turmeric powder for 10 minutes
2. Dust cod fillet with potato starch, dip in beaten egg then coat with breadcrumbs
3. Shallow fry cod fillet in hot oil till golden brown on both side
4. Remove and drain well before serving.

You can serve this with rice, pasta or even use it to make fish burger.
